Iron cleaver

Iron cleavers used by chicken rice hawkers are honed to razor-sharpness on a knife sharpener and balanced to provide the leverage needed to cut through chicken meat and sometimes, bone. Some of these cleavers have a wooden handle while others are cast from a single piece of metal.
